Wales' best eatery creates college pop up restaurant

The owner of a local eatery, which scooped the 'Best Welsh Restaurant' award two years running, opened a pop-up restaurant at a local college, much to the delight of its diners.

Owner, manager and executive chef of Signatures Restaurant, Jimmy Williams, created a 5-course meal for Coleg Llandrillo's patrons within the award-winning Orme View Restaurant on the Rhos-on-Sea campus, for one night only…or so he thought. Due to demand, there will be another event in September.

Ten members of staff from Signatures - of whom four were ex-Coleg Llandrillo students - took over the college's kitchens and restaurant for the evening, working alongside ten of the college's Hospitality and Catering students. Jimmy ran the restaurant, whilst wife Louise ran front-of-house operations.

The mouth-watering menu for 60 comprised: warm fillet of salmon, buttered samphire, smoked haddock scotch egg, pickled radish and saffron mayonnaise; Signatures gin and tonic sorbet; 'Duo of Welsh lamb' - roast rump and shoulder wellington, baby ratatouille, fresh asparagus, garlic pomme puree, lamb jus; classic lemon tart, crisp meringue, fresh raspberries, raspberry sorbet, and coffee and white chocolate fudge.

VRQ Professional Cookery and VRQ Professional Food and Beveridge Service students were involved in the whole process: from preparation, through production to front-of-house duties.

Tutor Mike Garner said: "It was a fantastic opportunity for the students to work alongside industry professionals, which will undoubtedly improve their range of skills and boost their CVs.

Jimmy and Louise could not praise the students highly enough and from feedback received on the evening, the diners were thoroughly impressed too.

Together Jimmy, Louise and their exceptional team have helped Signatures Restaurant become one of the most popular restaurants in North Wales and a truly special part of the Aberconwy Resort and Spa offering.
